I tried it as soon as I read about it here. I have an iPod Touch with the latest firmware, not jailbroken.
My results: yes you can play your music with rythmbox. But! and it is a great but, I cant add music to the iPod. I took an mp3 from my desktop and tried to copy it with rythmbox, it seems to add it, which is confirmed by browsing with Nautilus but it does not show up in the music menu of the iPod.

I have a 32 gb 3G Touch (3.13). It shows up in Rythmbox, but doesn’t show any music on it. I can also browse the saved photos, but it won’t open them.

Jailbroken iPhone 3g 3.1.3 here… shows up in Rhythmbox, I’m able to see my music, and drag music into the iPhone. It even took a .wav file, instantly converted it to .mp3 and dumped it on my iPhone in one fell swoop. The only thing that’s funky (not that I care) is my voice memos don’t playback in Rhythmbox.
