You can easily jailbreak iPhone OS 3G/3GS 3.1.2 with either PwnageTool 3.1.4 or Blackra1n but if you want to unlock your iPhone then you must use Pwnagetool to upgrade with custom firmware and use Ultrasn0w to unlock iPhone since there is no tool available which unlock iPhone OS 3.1.2 baseband 05.11.07.

Well this may be for some time while as Geohot has started working on finding exploit for iPhone OS 3.1.2 which can be used to unlock iPhone. From his blog post it seems Geohot is successful in finding exploit for OS 3.1.2 Basenband 05.11.07.
