To get it jailbroken again I used the geohot method (which doesn't require a 3.0 downgrade). But for some reason it still wouldn't unlock the phone to be used with other sim cards. After 2 days of displaying "no service" and 40 unsuccessful attempts to see the geohot iphone unlock to completion (the sn0w application), I gave up on it, found this blog, logged on to Cydia via wifi and downloaded this ultrasn0w app and it worked like a charm.
